Baked Apple A Winter Dessert

Temperature in Jordan is getting lower and the city starts to prepare for Christmas. Although only around 5% of the population are Christians, there is nearly nothing you can´t get for Christmas except a fir tree ,). Definitely time to bake nice-smelling dainties. With the knowledge I brought from home, spoiled with tons of cookies, I decided to prepare Baked Apple as a low carb version. I combined the apple with a mini-muffin covered with some vanilla pudding, but certainly, they can be prepared separately.

If you decide for the combination start with the muffins (because they should cool down) and make sure you have a muffin-tin and/or muffin baking cases.


          INGREDIENTS Muffins for 12 pieces

  • 150 g almond flour
  • 50 g coconut flour
  • 4 eggs
  • 1 tbsp. baking powder
  • 4 tbsp. butter
  • 30 g stevia
  • 1 tsp. salt
  • Milk



  1. Preheat oven to 180°C circulation air.
  2. Separate the egg white from the yolk, season with a pinch of salt, and beat the egg white until stiff.
  3. Stir yolk with butter and a pinch of salt until creamy. Mix in almond flour, coconut flour, baking powder and stevia.
  4. Mix the beaten egg white slowly with the almond-coconut paste (add some milk if the dough gets too sticky).
  5. Place the muffin baking cases into the muffin-tin and sprinkle them with butter.
  6. Place the paste onto the baking cases and leave it in the preheated oven for approx. 20 minutes (depending on the oven).
  7. After baking is finished, remove them and let them rest until cooled.


Tip: Serve the muffins with some vanilla-pudding.


           INGREDIENTS Baked Apple for 4 servings

  • 4 apples
  • 40 g walnuts
  • 20 g raisins
  • 2 cl rum
  • 1 tbsp. cinnamon
  • 20 g stevia
  • 20 g butter



  1. For the filling: mix the walnuts, raisins, rum, cinnamon and stevia and let them rest for 20 minutes.
  2. Preheat oven to 180°C circulation air.
  3. Wash and core the apples making sure not to go all the way through and to leave the bottom.
  4. Stuff 1 tbsp. of butter inside each apple. Then add the filling and bake for 10-15 minutes until the apples are soft.

After baking is finished serve the warm apple with a vanilla covered muffin.
